This makes a perfectly pleasant tea cake. You dont need to use a springform pan, but use something round with large sides.

  • 200 g butter
  • 200 g brown sugar

  • 5 apples

  1. Preheat the oven to 350°F. Grease and flour the baking pan.
  2. Per your perference, peel or dont peel the apples. Slice 1 apple and set aside for the top. Slice the remaining 4 apples.
  3. In the mixing bowl, mix the flour, baking soda, salt, and mixed spice together.
  4. Add the softened butter, sugar, and eggs to the flour mix and beat for a few minutes until well mixed. Add the four diced apples and stir.
  5. Spoon the mixture into the baking pan and arrange the remaining apple slices on top.
  6. Bake for 55 minutes or until knife comes out clean.
  7. Allow to cool in the tin for a bit before transferring to a wire rack to completely cool before serving.
